For example, if you set the desired humidity to be 50%, then when the bath fan detects that bathroom humidity rose above that 50% level, it will automatically turn on. And when the humidity drops just below 50%, then the fan will turn off.

It acts very similar to your HVAC wall thermostat except with relative humidity rather than temperature. A humidity sensor is a great feature to make sure that the bath fan is actually used and to prevent mold growth or framing damage in the bathroom wall cavities.
